Hopefully you have adapted to the new “norm” by now. It is what it is for NOW and know that this is just temporary AND most importantly keep following the guidelines and keeping the power of prayer and positive thoughts going strong.
Virtual Cooking Class
Talking about the new norm, We (Hannah, my bonus daughter and I) hosted our first virtual Divalicious Cooking Class last Friday. I wasn’t sure how it was going to go, because I am the one who makes the app, main course and dessert and of course the best part is always the connection of new ladies and the sharing of everyone else’s ideas and hints on cooking healthy.
It wasn’t the same as being in one room together, but we had a BLAST! So did all of the 21 ladies who chimed in. Not only did they watch and learn on how to make greek layer dip, but they made it along with me. I sent out a newsletter explaining the idea, what we were going to make and the ingredients.
We did the class form 5-6 and made it a social happy hour while making something healthy and new. It felt so great to laugh, share, create and of course cheers together!

Skinny Greek Layer Dip
Why Skinny? I don’t like the word skinny, but it’s so catchy when it comes to food or drink. It immediately says…lighter version. Less calories.
I used a lighter base of non fat greek yogurt & 1/3 fat cream cheese. Yes, we need the fat, but I am using it in other areas in the dip. Olives and Feta. Finding balance is how we can enjoy the foods we like but in lighter versions. That way we don’t torture ourselves on another awful diet.
I also used lots of fresh herbs and a light greek dressing.
You can enjoy this dip with your favorite crackers or fresh pita. It is also super yummy served as a topping on chicken as a main meal. Scoop out a serving and pile it on chicken or even cooked ground turkey. Or, even adding a can of salmon on top for a meal. It lasts for days in the refrigerator. Okayyyy, let me repeat that, it can be left for days as long as you don’t gobble it all up at once! haha. WARNING: It tastes Amazing!
Divalicious Recipe
Skinny Greek Layer Dip
Creamy, zesty, full of flavor indeed. A great entertaining appetizer or you can even make single servings for yourself. Also, you can add or subtract anything according to your taste buds. This diva-lish dip can last up to 3-4 days in the fridge.
Ingredients
- ⅓ cup no fat plain greek yougurt
- ⅓ cup reduced fat cream cheese OR
- ⅓ cup Kitehill cream cheese (non dairy)
- ½ lemon
- ½ -1 tablespoon of minced garlic
- ½-¾ cup of favorite hummus (spicy, red pepper, garlic)
- ½ english cucumber
- 1 cup cherry tomatoes
- Kalamata olives
- ½ cup Feta
- A Lite greek dressing or mix olive oil, balsamic, s&p
- Spices: DRY: oregano, garlic powder FRESH: Basil, Parsley
DIRECTIONS:
Whip together greek yogurt, cream cheese, minced garlic and squeeze your lemon half to get a little juice into the mix. If you want to add more lemon after you mix, go ahead!
Spread mix as your first layer. Then lightly spread the hummus on top. Chop cucumbers into thin quarters and toss with some oregano and a little dressing. Quarter tomatoes and toss with garlic powder, salt and pepper. Then spread your veggies on top of the hummus layer. Half the olives and line the outer edge of your dish and sprinkle a few all over the dish. Chop fresh herbs and sprinkle all over. I like to use about ⅛ of a cup of each basil & parsley. Sprinkle feta and lightly drizzle a little more greek dressing on top of the final dip.
- Enjoy with your favorite or or slice of up a pita bread and warm in the toaster oven
- Also, leftovers are a great topping on eggs or chicken or a can of salmon
