Are you ready to pizzaz up your same ole zoodle or noodle dish? Of course you are! One secret in creating easy, simple, healthy Divalicious meals is to use the same lean proteins and complex carbs and veggies each week, but creating and using different sauces and condiments. I tell all my clients, I’m the “Condiment Queen” haha!! Funny as it is, it is has helped me stay on track and never get bored of the same ole healthy foods. Just like your fitness routines need variety, so do your taste buds.
Skinny Pesto
I am not a big fan of pesto, not because of the taste, I love the taste, but the calorie count is SO high for very little. As you may know, pesto is mostly fats. Yes, good fats are great for you, but that doesn’t mean eat as much as you want. 1g of Fat equals 9 calories. Those calories add up super fast.
The other night, I wanted to make my shrimp and butternut squash dish (Super easy) and shrimp and orzo for my hubby, but I wanted to spice it up differently. I thought..hmmmm, I have never played with making a lighter pesto and I definitely had extra time this week to create.
After a few tweaks…I was able to make a pesto that is 1/2 the fat and calories BUT tastes so full of flavor. Yay!
Skinny Pesto Recipe
If you can, make this easy sauce ahead of time, so it is ready to grab and go when you whip out dinner.
Divalicous Recipe
Ingredients:
- 2 cups of basil leaves (packed)
- 2 ounces of water
- 4 tablespoons Parmesan cheese, shredded
- 1/4 cups of pine nuts
- 1 tablespoon Olive oil
- 3 cloves garlic mined or 2 tablespoons of already minced garlic
- 2 tablespoons fresh lemon juice
- 1/4 tsp sea salt and pepper
Directions:
- Blend all ingredients in a food processor or Nutribullet until smooth.
Pesto Dinner Ideas
Classic Pesto is mostly served with fusilli, cavatappi or rotini pasta. Mostly because the curves and grooves allow the pesto to stick better since it is a oil based sauce. However, if you want to create a lighter divalicious dish try the following ideas with your new skinny pesto sauce.
- Sautéed shrimp with butternut squash or zucchini noodles
- Chicken and chickpea pasta
- Air fryer Tofu and Cauliflower rice
