Happy January 

Hope you have been able to settle into this new month and year with some possible new goals, or more importantly recognize the goals you never were able to accomplish last year and make them first.  I know I have a few!

After a few months off from sharing some new Divalicious recipes, I am ready to give you some new ideas.  After all, this is the month of either getting back on track or creating new habits. I am pretty sure most of us are ready to feel alive and free again.  Even if that means creating new ideas in your own kitchen.

As a fitness and nutrition coach, I see where the disconnect happens with trying to live a healthy, functional and most importantly fun lifestyle.  It isn’t the fitness aspect, It IS the food.

A few simple habits will do wonders, I PROMISE!

Food Prep

Yep, we see it over and over again!  However it is the truth. When there are healthy foods you like and enjoy available, I promise you will want to consume them verses not having them available.  If not, that is where the quick not so good decision happens. You know what I mean! Even though you know it isn’t the best decision, it was convenient.  Here are a few ideas: #preparationiskey

Menu Planned

If you have an idea and a game plan for dinner each night, it makes it SO much easier to execute.  Remember, meals do NOT need to be complex to be healthy or taste good.  Most of my meals and snacks that are 5-6 ingredients are the BEST!

Divalicious Recipe

Simply Divalicous Cookbook is about to add on extra chapters dedicated to: Craving a side dish? AND meatless Monday dishes..which by the way, isn’t so bad to have a non meat meal once in a while.

Enjoy this super yummy comfort food that is filled with fiber and yet so healthy, low cal and low carb.  WIN WIN

Cheesy Cauliflower Mash

Ingredients:

4 cups cauliflower rice (approximately 1 bag. You can find a bag of already riced cauliflower  in most produce sections of grocery stores)
2 tsp. Minced garlic ( I cheat and buy it minced)
3 tbsp. half & half or non dairy creamer
3 tbsp. grated Parmesan cheese
2 tbsp. Kitehill cream cheese or light regular cream cheese
1 tsp garlic  powder
Sea salt & black pepper to taste

Directions:

Steam cauliflower rice and add a splash of water either in the microwave for 3-5 minutes or stove top on high.  Start with 3 minutes.

Check to see if cauliflower rice is soft, if not add on 30 second increments. Drain any excess water if needed.

Add all ingredients except the slices green onions and mash until completely combined together and cheeses melt.
When ready to serve, sprinkle desired green onions on top to make it look pretty!


MAKES 4 SERVINGS
Serve with a lean protein and another green veggie.
Ex: sautéd shrimp or scallops & an arugula salad. A favorite dressing: Whole Foods Sesame Ginger.
Even place your shrimp or scallops on top of the mashed cheesy cauliflower. If your like me..I add a little hot sauce and extra garlic
