Who is ready for some New, Easy Diva-licious food ideas? Routine is setting back in with school and summer coming to an end.
I swear this year has flown by SO fast and probably will continue to with all the exciting adventures ahead with both Bella Diva Fitness and my Family.
Who is still using cauliflower rice in place of rice? Who uses cauliflower rice in other meals and not in place of rice?

Fresh or Frozen Cauliflower Rice
Which one is better? BOTH. I buy and use both. I never buy a whole cauliflower head and pulse it down to rice style. Who has time for that!?? I buy it all ready chopped and I buy different blends of frozen cauliflower rice. Both frozen & Fresh are SO easy to throw in a saute pan and cook up. Add any extra goodies to your mix create different bowls and sauté away.
Add-ons:
-Veggies:Tomatoes, peppers, garlic, onions, any extra veggie, any spices
-Proteins:Chopped turkey bacon, chopped chicken sausage, eggs, shrimp, tofu
-Sauces: salsa, chilli sauce, extra olive oil and balsamic, green goddess dressing, plain greek yogurt & spices
You can literally create anything as a bowl!

Cauliflower Rice 3 Ways
This awesome high fiber veggie can be used SO many ways. From “rice” to “pizza crust”
Here are 3 easy methods
1.Sauté and or Fry:
When I have a long work day, I will just toss a bag of cauliflower rice of choice in a saute pan with olive oil and saute away for 5 minutes. SECRET TIP: Only cook for 5 minutes and then turn up the heat and spray extra oil. Let it sit on the high heat for 2-3 minutes and the outside will crisp up nice and brown!

2. Steam and Mash:
One of my favorite 3 ingredient side dish mimics “mashed potatoes”
Steam as much cauliflower rice as you need. Maybe you need a single serving or for a family size or just want to have extra for leftovers. Mix in a spoonful or 2 (depending on amount of cauliflower) lite cream cheese or my FAVE kite hill chive cream cheese made with almond milk) Mix and Mash and top with fresh cut chive, sea salt, pepper and garlic power. YUM!

3. Just Use Raw:
I love to sprinkle riced cauli onto my salads, into my omelettes, while I’m cooking up ground turkey or beef. Adds fiber and fills you up! I love to make these easy Breakfast bowls and have a side of mixed berries. Bowl Below: cauliflower rice, sauté spinach, sweet peppers, 1/4 avocado, 1 chicken sausage, egg, fresh dill, sea salt, pepper and top with a little ketchup and hot sauce. YES PLEASE!

Hawaiian Cauli Rice
A Sweet, Salty, Fiery combo that hits the palate all at once! Simple basic ingredients that add a diva-lish flair!
INGREDIENTS:
- 2 cups Cauliflower Rice
- ¼ cup diced scallions
- ½ red pepper finely chopped
- ½ cup chopped pineapple
- 1 medium jalapeno diced
- 2 pieces Turkey bacon or lean bacon (no nitrate) chopped
- 1-2 tsp garlic powder
- ⅛ cup Soyaki Sauce (Trader Joe) or regular low sodium soy or aminos
- 1 ½ tablespoon olive oil
- S & P to taste
DIRECTIONS:
- Warm Saute pan on medium heat
- Add olive oil, scallions, pepper, bacon, jalapeno Saute 3 min. The add pineapple. Saute 3 more minutes. Add cauliflower, spices and soy. Let simmer for 3-4 minutes. Then keep mixing and moving around. Don’t be afraid to add a little more olive oil or spray.
- Total time: 12-15 minutes.
Enjoy with crock pot pulled chicken or pulled crock pot extra lean pork with low sugar BBQ Sauce and a side of spinach. Or Sauted Shrimp. Need ideas for low sugar BBQ, ASK! Try to avoid no sugar added BBQ. It’s sweetened with artificial sweeteners.

Cauliflower Conclusion
Do I still eat carbs and create meals with complex carbs for my clients….YES! When you are trying to loose body fat its great to try to keep your last meal with less carbohydrates because you are likely not doing a heavy workout after you eat. Also it is nice to get in more veggies and fiber to your daily food choices as well.
